Cheesemaking Class with Roberta Devers-Scott

After teaching summer classes, Roberta is back at Healthy Living for a repeat performance. This time, instead of mozzarellas and cheddars, the emphasis will be on goat milk cheeses such as Chevre, aged Chevre, Crottin, and Valencay. Roberta will show us how to “dress” these cheeses up just in time to give as Christmas gifts. We will also learn how to make yogurt and cultured butter.

All cheesemaking will be done in the traditional way using organic goat milk and organic jersey cow milk. We will learn to make our own cultures and even our own rennet!
