Lebanese Cuisine: A Course in Two Parts (Part 1 Mezze and More)

Mezze is an integral part of a proper Lebanese meal. Small plates and appetizers are set out for people to enjoy, sometimes for hours on end — and that’s just before the main course! We’ll be making our own authentic mezze of tabbouleh, and discover the many uses of bulgar wheat — a staple in the cuisine. We’ll practice roasting techniques with eggplant for a smoky baba ghannouge and discuss how to source good meat for raw consumption, as we make from-scratch kibbeh nayyé, a fabulous raw lamb tartare.
On the Menu:
Tabbouleh // Bulgar wheat, tomato, parsley and mint, charred lemon
Mezze Plate // Citrus cured olives, smokey baba ghannouge, toasted cumin hummus, whipped feta with lemon and herbs
Kibbeh Nayyé // Spices, bulgar, green onion, olive oil
