Very Vegan: Fresh from the Farm

May is THE month for spring cleaning and clean eating! This class brings out the beauty of spring with line-up of vegan dishes prepared with plant-based ingredients. We’ll talk all about sourcing seasonal produce and how to use what’s fresh from the farm in exciting ways.  We’ll cover the basics of soup making, learn how to cook mushrooms so that they’re just right, and sharpen our basic knife skills as we chop vegetables. As with any seasonally inspired menu, it’s always subject to change according to what is available—and that’s the fun part! Join our very vegan class and fall in love with clean, spring eating!

-Asparagus soup // garlic scapes, almond, olive oil

-Veggie Rubens // mushroom, avocado, rolling meadows dressing
