Cajun Spiced Chicken Thighs

4 boneless, skinless chicken thighs
2 Tbsp olive oil
1 Tbsp cajun seasoning
Salt and Pepper
4 lemon wedges
1 Tbsp fresh chopped parsley

In a medium dish combine the chicken thighs, oil, and cajun seasoning. Mix well, cover, and marinate for at least 1 hour and up to 24 hours. When ready to cook, turn your grill on high heat and season the chicken thighs with salt and pepper. Place chicken thighs onto the hot grill and cook 6-8 minutes on each side or until an instant read thermometer inserted into the thickest part of the meat reads 160 degrees F. Remove thighs from heat, place on a clean serving platter, and rest for 10 minutes. Serve sprinkled with fresh parsley and lemon wedges for squeezing.
