5 Delicious Things To Do With Squash

Did you know there are over 135 varieties of squash grown all over the world, and thousands of ways to prepare it?  With the winter approaching, don’t get stuck in a rut of cooking these tasty veggies the same way each time!

On Tuesday, October 26, from 5:30-7:30, Food Education Coordinator Nina Lesser-Goldsmith will prepare a number of different squash recipes with a variety of squashes.  You will learn how to perfectly roast squash for creamy, intense flavor, how to make purees, how to incorporate squash into other dishes, and even what to do with the squash skins.

Here is what’s on the menu:

  • Roasted Delicata Squash with Pomegranate Molasses
  • Roasted Squash, Caramelized Onion and Gruyere Gallette
  • Fresh Pasta with Roasted butternut Squash Cream, Hazelnuts and Parsley
  • Curried Kabocha Squash Puree with Toasted Almonds and Golden Raisins
  • Maple Spaghetti Squash
