Cilantro Pesto Sauce
- 2 bunches cilantro; washed and patted dry
- ¾ cup almonds
- 3 cloves fresh garlic; minced
- 2 tbsp. lemon juice
- 1 tsp. salt
- ½ tsp freshly ground black pepper
- 2 tbsp. grape seed oil
- ¾ cup olive oil
- ½ cup parmesan cheese; grated
Combine all ingredients except for oil and cheese in the bowl of a food processor. Pulse until well chopped, drizzle in grape seed oil until everything is finely chopped. Stream in olive oil while pulsing until it reaches the consistency of preference. Pour into serving bowl, and hand mix the parmesan cheese. Taste and adjust seasoning if needed. Makes about 2 ½ cups.
