Guacamole
- 2 ripe avocados, mashed
- 1/2 peeled tomatoes, finely diced
- 2 Tbsp grated onion or finely chopped scallion
- 2 Tbsp fresh cilantro, chopped
- 2 Tbsp lemon juice
- 1/2 tsp chili powder
- 1/2 tsp coriander
- 1 tsp olive oil
Mix all ingredients together and keep rerigerated until ready to serve. To prevent browning, press a pieces of plastic wrap into the guacamole, pushing out all air pockets.
