Cheese of the Week: Madonna from Sage Farm Goat Dairy
Sage Farm Goat Dairy, based in Stowe, VT and run by sisters Molly and Katie, is a relative newcomer to the local artisan cheese world and specializes in farmstead fresh and soft-ripened cheeses, such as the charming small round called Madonna. Milk for this cheese comes from their microherd of alpine goats who are allowed to browse in the pasture for the majority of the year and after only two weeks of ripening, it’s ready to be enjoyed. With the bright white rind and creamy, mild interior characteristic of soft-ripened cheeses, this little disc is a treat to be eaten on its own, drizzled with honey, or baked with fruit or herbs. Its small size and rich flavor make it perfect for one or two people to share. We are pleased to be one of only a few places to carry Madonna as a fine addition to our local goat cheeses.
