Cheese of the Week: Red Dragon
With temperatures soaring and grills regularly firing up, we decided it was the perfect time to highlight a lovely little British cheese called Red Dragon. Called Y-Fenni before it’s waxed in its characteristic bright red coating, Red Dragon has a powerful flavor worthy of its name: it bursts with the brightness and bite of whole grain mustard seeds and the sweet tanginess of Welsh ale while staying smooth and sharp like the good Welsh cheddar it is. The mustard seeds also serve to create a complex texture and the ale provides extra moisture, making the mouthfeel simply exquisite. An outstanding choice for melting onto grilled hamburgers, slicing onto turkey sandwiches, or having with a pint of beer, Red Dragon is one of those cheeses perfect for summer.
