Maple Ginger Breakfast Sausage

  • 1 pound ground pork
  • ¼ cup iced water
  • 2 Tbsp maple syrup
  • 2 tsp fresh ginger, minced
  • 2 Tbsp fresh sage, minced
  • 1 ½ tsp apple cider vinegar
  • 1 tsp kosher salt
  • 1 tsp fresh garlic, minced
  • ½ tsp sugar
  • ¼ tsp pepper
  • Olive oil, as needed

 

  1. In a medium bowl, mix together the iced water, maple syrup, ginger, sage, apple cider vinegar, salt, garlic, sugar and pepper until all ingredients are well combined.
  2. Add the pork to the mixture and mix well.
  3. Divide the sausage mixture into eighths and shape them into 2 ½ inch disks.
  4. Heat a skillet over high heat with a couple swirls of olive oil.  Fry the sausage patties on both sides until they are completely cooked through, about 3 minutes per side.
  5. Serve while hot
