Fiesta Sausage and Peppers
1 pound sweet Italian sausage, sliced
1 Tbsp olive oil
2 cloves garlic, minced
1 jalapeno pepper, seeds removed, small diced
1 cup green bell peppers, cut into ¼ inch strips
1 cup onions, cut into ¼ inch strips
½ cup tomato, small diced
¼ cup cilantro, chopped
½ tsp cumin
Salt and pepper to taste
- Brown the sausage in large skillet with olive oil over medium-high heat for 5 minutes.
- Add garlic, peppers, and onions. Cook for an additional 8 minutes, or until the sausage is thoroughly cooked and vegetables are tender.
- Add tomatoes, cilantro, cumin, and season with salt and pepper. Cook for one more minute.
- Remove from heat. Serve hot.
