Super-Fast Sweet Potato Hash
½ onion sliced
½ red pepper, finely diced
2-3 Tbsp olive oil
1 cup leftover roasted sweet potato
1 clove garlic
Pinch ground cumin
Salt and pepper to taste
In a medium pan over high heat brown the onion and red pepper in some olive oil. Cook until they are softened and fragrant. Add the sweet potatoes, garlic, and cumin and mix together. Cook for 3-5 minutes or until the sweet potatoes are heated through. Add salt and pepper to taste. Serve with a fried egg on top!
