Mixed Berry Crumble Pie (Makes 2 Pies)

Filling:

  1. 1 cup sugar
  2. 2 frozen pie shells
  3. 1 teaspoon vanilla
  4. 1/4 cup cornstarch
  5. 5 cups frozen blueberries
  6. 5 cups frozen strawberries
  7. 1 teaspoon lemon juice
  8. 1/2 teaspoon salt
  9. 1 teaspoon cinnamon

Crumble Topping:

  1. 1 1/4 cups all-purpose flour
  2. 1 1/4 cups oats
  3. 3/4 cup brown sugar
  4. 3/4 cup butter (cold, cubed)
  5. 1 teaspoon cinnamon

Instructions:

For the Pie Shells:

  1. Preheat the oven to 375°F .
  2. Use a fork to dock the frozen pie shells by poking holes in the bottom. This helps prevent the crust from puffing up during baking.
  3. Place the pie shells on a baking sheet and parbake for 8-9 minutes. Remove from the oven and set aside to cool slightly while preparing the filling.

For the Filling:

  1. Preheat the oven to 375°F.
  2. In a large saucepan, combine the sugar, cornstarch, vanilla, lemon juice, salt, and cinnamon. Add the frozen blueberries and strawberries.
  3. Cook the mixture over medium heat, stirring occasionally, until it thickens (about 5-7 minutes).
  4. Remove from heat and let the filling cool slightly.
  5. Divide the berry mixture evenly between the two frozen pie shells.

For the Crumble Topping:

  1. In a large bowl, combine the flour, oats, brown sugar, and cinnamon.
  2. Cut in the cold butter using a pastry cutter or your hands until the mixture forms pea-sized crumbs.
  3. Sprinkle the crumble topping evenly over both pies, covering the fruit filling.

To Bake:

  1. Place the pies on a baking sheet and bake for about 30 minutes, or until the filling is bubbly and the crumble is golden brown.
  2. Let the pies cool slightly before serving. Enjoy warm or at room temperature!
