Summer Herb Vinaigrette Salad Dressing

  • ¼ cup fresh lemon juice (about 1 large lemon) 
  • 1 tsp Dijon mustard 
  • 1 small garlic clove, finely grated 
  • ½ tsp honey or maple syrup 
  • ½ cup olive oil 
  • ¼ cup chopped fresh herbs (parsley, basil, dill, chives, or a mix) 
  • Salt and pepper to taste 

Instructions: 

  1. In a bowl or jar, whisk together lemon juice, mustard, garlic, and honey. 
  2. Slowly whisk in olive oil until emulsified. 
  3. Stir in chopped herbs. Season with salt and pepper to taste. 
  4. Store in the fridge for up to 5 days. Shake before using.
