Cheese of the Week: Duet

Sometimes one cheese just isn’t enough.  Thankfully, Grafton Village Cheese Co., whose facilities are located in Grafton and Brattleboro, VT, has a delicious answer to this conundrum and it goes by the name of Duet.  2nd Place Winner in the flavored cheddars category at this year’s American Cheese Society competition, it is a wedge of ripe, tangy, creamy Wisconsin blue cheese- Faribault Dairy’s St. Pete’s Select Blue Cheese- sandwiched between two layers of Grafton Village’s premium raw cow’s milk cheddar.  The result of this marriage is a powerful combination with many serving possibilities: the cheesemakers themselves recommend placing this cheese at the center of your cheese plate, or pairing it with tart apples and white wines like Sauvignon Blanc.  We also think it’d be a smash when mixed into your hamburger patties or added to your favorite blue cheese vegetable dip.  Any way you use it, we think you’ll enjoy this award-winning cheese!
