Cheese of the Week: Summer Snow by Woodcock Farm

With summer winding down, we’ve chosen to say goodbye to the season by featuring one of its true delights this week: Summer Snow by Woodcock Farm. Handcrafted by Mark and Gari Fischer on their farm just outside Weston, VT in the Green Mountains, Summer Snow is a farmstead raw sheep’s milk cheese which is only available during summer months. It is a luscious soft-ripened cheese made exclusively from the Freisan breed of sheep, known in the cheesemaking world for their high quality milk. The Fischers’ sheep are raised on organic pastures, making for a healthy and diversified diet and resulting in a rich, wonderful cheese. Summer Snow is cool, unctuous, and unbelievably buttery with a mild, slightly mushroom-y, and pliable bloomy rind and a creamy, dense center full of sweet and lemony flavors. We think it would be stellar layered on top of late-season summer veggies in a toasted baguette sandwich, topped with sweet grapes and peaches on crispy flatbread crackers, or simply paired with a Pinot Noir or Sauvignon Blanc. However you eat it, we recommend you get some Summer Snow while you can!
