Cowgirl Creamery Introduces its Fourth Seasonal Cheese: Chimney Rock
In 1997, Sue Conley and Peggy Smith opened Cowgirl Creamery in Pt. Reyes Station, CA. They started with an old barn, made it beautiful, put in a small plant for making hand-crafted cheese, bought organic milk from their neighbor and before long the world found them! Now, 15 years later, they’re continuing to make just a small collection of cheese — five soft aged and three fresh, totaling about 4,000 pounds per week. In addition they make seasonal cheeses and are happy to introduce their fourth seasonal cheese- Chimney Rock, in honor of the cool fall days fast approaching.
Chimney rock is washed in wine and covered with dried organic Pioppini and Shiitake mushrooms. As with all their seasonal cheeses, Chimney Rock is made with organic Jersey cow milk from Chileno Valley Jersey Dairy giving it a rich, yellow paste. Named after one of the most spectacular hikes in all of Point Reyes Station, Chimney Rock is at the end of a land bridge that’s surrounded by lush meadows and cool breezes.
