Healthy Living Loves Local: Thistle Hill Farm

While many of our Vermont cheesemakers were initially inspired by cheeses made in the Alps, only Thistle Hill Farm in North Pomfret, VT can boast that they create traditional alpine-style cheese (complete with cooking in a copper kettle and being shaped in imported molds) using certified organic milk from grass-fed cows.  Sourcing the raw milk from their own herd of Jerseys, John and Janine Putnam put a lot of energy, dedication, and love into each delicious wheel of a cheese they call Tarentaise, from the milking in the beginning to the minimum five months of aging.  And although each bite of this complex and delightful cheese brings a little bit of that alpine inspiration to your life, don’t worry: it’s still totally Vermont and we totally love it.
