Our Saratoga Springs Cheese department now carries artisan, raw cow’s milk Havarti, Nokkelost and Tomme made by the Felio family in Poland, NY near Herkimer.
The Felio’s Three Village Cheese, is a family run farmstead cheese maker in Herkimer County. Their goal is to produce artisan cheese of the highest quality with fresh milk from cows on their farm. They aim to contribute to the resurgence of local food in the area with unique flavorful cheeses worthy of Herkimer County’s rich cheese making heritage.
Nokkelost is a traditional Norwegian cheese flavored with cumin, caraway seed and cloves. Enjoy Nokkelost with hearty brown pumpernickel, gherkin pickles and your favorite stout.
Members of our cheese department paid a recent visit to the farm and creamery and were impressed by the Felio’s commitment to producing these high quality Norwegian style cheeses in upstate New York. The Felio’s shared that a long term goal is to make Parmesan Reggiano at the creamery as well. Art Felio has spent time in Italy learning to make Reggiano and would like to replicate the process at Three Village Cheese.
