Vermont farmers have outdone themselves, supplying us with an unparalleled array of locally raised meats and poultry. Using traditional European techniques, our own Healthy Living team of butchers and chefs have been busy crafting rustic charcuterie infused with local herbs and spices: Duck Rillettes, Hunters Terrine and more. For the piece de resistance – star attraction of a top-notch feast- we have several impressive cuts to choose from, including a LaPlatte Farms Rib Roast, aged no fewer than 60 days right here on site, and house-made Italian-style Porchetta from Vermont Family Farm.
