One of Divine Wines’ newest arrivals is Gordo from Patrick Mata and Alberto Orte of Compania de Vinos del Atlantico (CVA). The men, both from families that have hundreds of years of wine-making history, have partnered to bring us wines from all over Spain. Gordo is from the Yecla region, which is marked by its high altitude, relative dryness, and cooler climate. The wine is a blend of 70% Monastrell and 30% Cabernet Sauvignon, both of which are organically grown. Unlike some blended wines, the two grapes are fermented separately, aged in oak barrels for 2-3 months, and then combined. This method allows each variety to develop its own character, and it shows in the unique flavor of the wine. The two varieties don’t overlap as much as they sit next to each other, the fruity lushness of the Cabernet smoothly balancing the pepper of the Monastrell. Despite the boldness of both varieties and their tendency to yield higher tannins, the resulting blend is surprisingly mellow, with notes of black pepper, subtly sweet dark berries, and oak. This is a delicious wine on its own or paired with tangy cheeses, fattier cuts of meat, and hearty or spicy tomato-based dishes.
