Raw Pad Thai

Whether it’s less French fries or more vegetables, January is the perfect time to try out some new healthy eating habits. How about sweet and spicy Raw Pad Thai made with kelp noodles, crunchy vegetables and an indulgent almond sauce?

Across the river in Winooski, Twincraft Skincare invited tastemaker, Mindy Elmergreen, to cater a raw food lunch for 14 of their enthusiastic employees. “Mindy turned our usual ‘hohum’ company catered lunch into something wonderful, delicious and healthy! The meal was beautifully prepared and Mindy took the time to educate us on raw food. There was plenty for everyone and the left overs went quickly in the kitchen!”

Raw Pad Thai

1 12 ounce bag kelp noodles, drained and rinsed
3 zucchini, spiralized
¼ C olive oil
2 T lemon juice
1 red pepper, julienned
½ red onion
2 green onions
½ C snap peas, halved lengthwise
½ C torn fresh basil
½ C torn fresh cilantro
1 T lime juice
1/3 C crushed raw almonds or cashews
1 T black sesame seeds, optional

Sauce
2 C dry-pack sun-dried tomatoes
4 T olive oil
2 T lime juice
4 cloves garlic
4 t coconut sugar
4 t tamari
½ habanero chile
3 finely chopped lemongrass
3 t grated fresh ginger
½ cayenne pepper
½ C almond butter
5 medjool dates

Soak the kelp noodles in warm water for 10 minutes, then drain and rinse. Return to bowl, and stir in oil, lemon juice and salt. Let marinate 1 – 2 hours.
To make the sauce, cover the sun-dried tomatoes with hot water in a small bowl. Soak for at least an hour to soften. Then, drain.
Combine all sauce ingredients except almond butter and dates in a high-speed blender. Blend until smooth. Slowly blend in almond butter and dates.
Toss red pepper, red and green onions, snap peas, basil, cilantro and lime juice with noodles. Mix in sauce, and top with almonds and sesame seeds if using.
