Roasted Chicken w/ Peach Compote accompanied by Roasted Potato Wedges & Fresh Steamed Kale

 

Winner Winner Chicken Dinner!!

This dinner is a winner! With fresh, bright, and vibrant colors and flavors,  this meal makes a very nutritious part of a balanced diet.

Roasted Chicken

Bone in chicken ( Breast, legs, thighs, etc…)

Olive oil

Salt

Pepper

Method of Preparation

1. Toss all ingredients (season to taste)

2. Roast in the oven (350) until the internal temperature of the chicken is 165 F.

3. Allow to cool, and serve with the compote.

 

Peach Compote

6-8 Peaches

1 1/2 cup Red Bell Pepper

1 Bunch Cilantro

1/8 cup fresh Garlic

1/4 cup Apple cider

1/4 cup Apple cider vinegar

1T Olive oil

1 T Canola Oil

1 Sprig fresh rosemary

1T Salt

1T Lemon/Lime juice

1/8 cup brown sugar

Method of Preparation

1. Halve the peaches, remove the pits, and lightly grill them on the flat side.

2. Chill the peaches and slice them into 4 slices per half.

3. Combine the peaches with all the other ingredients, toss to combine.

4. In a pot warm the compote until the peaches have softened a bit.

**Recommend doing this just before you are going to serve them, as the compote will not hold its firmness for very long.

 

This peach compote would also pair nicely with a number of different fishes as well ( Swordfish, Seabass, Grouper,etc…. anything with a meatier texture that would hold up to grilling.
