Arroz Con Leche
- 2 cups water
- 1/4 tsp salt
- 1 cup medium grain rice
- 2 1/2 cups whole milk
- 2 1/2 cups half and half
- 2/3 cup sugar
- 1 1/4 tsp vanilla
Bring the water to a boil in a large saucepan and add the rice. Cover and simmer over low heat until the water is almost all the way absorbed. Add the milk, half and half and sugar. Increase the heat to medium-high and bring the mixture to a boil. Reduce to a simmer and cook, uncovered, stirring often, until the mixture starts to thicken, about 30 minutes. The mixture should thicken so that a wooden spoon stands up when stuck into it. Remove from the heat, add the vanilla and mix well. Let cool. Serve at room temperature, sprinkled with cinnamon or shaved coconut.
