Asian Chicken Salad
- 1 pound of chicken, cooked, cooled and diced
- ¼ cup sesame oil
- 1 ½ Tbs rice wine vinegar
- 3 Tbs tamari
- 1 ½ Tbs sugar
- ¾ tsp sambal
- 2 -3 scallions, sliced
- 1/3 cup sliced almonds, toasted
- 2 stalks of celery, thinly sliced
- 2 medium carrots, shredded
- Salt and Pepper to taste
In a medium bowl, whisk together rice wine vinegar, tamari, sugar and sambal. Slowly whisk in sesame oil. Stir in chicken and vegetables. Season to taste with sat and pepper.
