Bacon Jam
- 3/4 lbs bacon; diced as small as possible, cooked, and most of the fat drained, leaving 2-3 Tbsp behind
- 1 large white onion; small mince
- 4 cloves garlic; minced
- 1 tsp cayenne pepper
- 1/4 cup maple sugar
- 1/4 cup water
- 1 1/2 Tbsp cider vinegar
In a soup pot, on medium heat, soften onion and garlic with bacon. Once soft and fragrant drain grease and add cayenne, maple sugar, and water and let cook for about 30 minutes until thick and jammy, stirring regularly. Add cider vinegar and cook for another five minutes. Serve with crostinis, on veggies, salad, eggs, ANYTHING!
