Baked Winter Fruit Compote
- ¼ cup sliced almonds, toasted
- 3 firm large apples
- 3 ripe pears
- 18 pitted prunes
- 14 dried yet moist figs
- 18 soft dried apricots
- 1 large orange, zest and juice
- ½ cup apple cider
- ½ tsp grated fresh ginger
- 1/8 tsp cinnamon
- ¼ cup sliced almonds, toasted
- Greek yogurt
A beautiful, warming, and nourishing dessert for the cold winter months.
Preheat oven to 350 degrees. To toast almonds, place in a heated dry skillet and toast for 1-2 minutes until golden. Remove from pan to cool. Stem and core, but do not peel the apples and pears. Place in an ovenproof dish and add the dried fruit. Mix the apple cider and orange juice together with the ginger and cinnamon and pour over fruit. Mix well. Cover dish with foil and bake for one hour. Remove from oven. Turn on broiler. Remove foil from the dish, stir so that the fruit is well coated with juice and place under broiler briefly to char fruit lightly. Garnish with toasted almonds and the orange zest. Serve hot or cold with Greek yogurt.
