Balsamic Herb Grilled Chicken

  • 3 tbsp balsamic vinegar
  • ¼ cup olive oil
  • 2 tbsp honey
  • 2 garlic cloves, minced
  • 1 tbsp fresh thyme, chopped (or 1 tsp dried)
  • 1 tbsp fresh basil, chopped
  • Salt and freshly ground black pepper, to taste

For the Chicken: 

  • 4 bone-in, skin-on chicken thighs (about 2 lbs) 

Instructions: 

  1. In a bowl, whisk together balsamic vinegar, olive oil, honey, garlic, thyme, basil, salt, and pepper. 
  2. Coat the chicken in the marinade and refrigerate for at least 30 minutes (or up to 4 hours). 
  3. Preheat your grill to medium-high heat. 
  4. Grill the chicken for 6–8 minutes per side, or until the internal temperature reaches 165°F. 
  5. Let the chicken rest before serving. Garnish with fresh basil.
