Basic French Fries
- 2 russet potatoes; cut into French fry shape (I like them thin!)
- Vegetable oil; a lot!
- Salt; as needed
Place fries in a deep bowl and cover with cold water. Rinse well until water runs clear and then cover again fully with cold water. Add a tablespoon of salt and let rest in water for about an hour. This will help to remove some of the starches from the potatoes and will begin to brine the fries with salt. After an hour drain all water and lay fries on a towel to dry. Preheat oil to 300 degrees. Drop fries in for about 4-5 minutes until golden. Remove from oil, drain and turn heat to 400 degrees. Drop into fryer for another 2-3 minutes until they are nice and crispy, remove from oil and drain. Season immediately
