Beet and Apple Soup
- 2 ½ lbs beets, trimmed, peeled, cut into uniform chunks
- 5 apples, peeled, cored, diced
- 1 quart apple juice
- 2 tsp salt
- ½ cup honey
A Healthy Living Cafe favorite!
Cover beets and apples with water and boil until soft. Puree using an immersion or table top blender.
Add apple juice, salt and honey. Stir to combine. Taste for salt and adjust as needed.
