Beet Brownies
- Yields 12-24 brownies
- 1/2 cup butter
- 8 oz. unsweetened baking chocolate bar
- 4 eggs, lightly beaten
- 1 cup brown sugar
- 1/2 cup brown sugar
- 1 tsp. vanilla
- 1 1/2 cups cooked beets, mashed or pureed
- 1 cup all purpose flour
- 1 cup whole wheat flour
- 1 tsp. baking powder
- 1/2 tsp. salt
- 1/2 cup walnuts, optional
What a great way to get some nutritious vegetables into a dessert!
Grease a 9 x 13 baking pan and set aside. Cook beets until very soft and puree in food
processor, set aside. Using a pot with 2 inches of water in the bottom and a stainless
steel bowl resting on top with chocolate and butter in it, melt chocolate until smooth;
remove from heat and allow to cool. In a medium bowl, sift together flours, baking
powder, and salt. In a large bowl combine egg, sugar, vanilla and beets; blend until
smooth. Gently fold in chocolate mixture until well combined. Working in 2 batches,
add flour mixture to chocolate and gently stir together until fully incorporated. Pour
into a prepared pan and bake at 350 degree for 30-40 minutes. Allow to cool to room
temperature.
