Cajun Style Wings

Yield:  4 servings


5 lbs chicken wings

¼ cup sea salt

¼ cup chili powder, salt free

2 Tbsp onion powder

2 ½ Tbsp dried oregano

2 ½ Tbsp paprika

2 ½ Tbsp dried thyme

2 Tbsp ground black pepper

1 Tbsp red pepper flakes, crushed

¼ cup garlic powder

Cooking spray, as needed

  1. Preheat oven to 350.
  2. Spray a sheet pan with cooking spray or line with parchment paper and set aside.
  3. In a large bowl combine all of the herbs, spices, and seasonings.  Mix well.
  4. Add the chicken wings to the bowl, and toss until the wings are completely coated with a generous layer of the cajun blend. Note that not all the seasoning will be used. To save some for later, add half the seasoning to start and add more if needed. Reserve the remaining (uncontaminated seasoning) for a future use.  
  5. Spread the wings out in a single layer on the sheet pan.  
  6. Bake uncovered for 30-35 minutes.
