- ½ cup pitted dates
- ½ cup cashews
- 1 cup shredded coconut
- 1/3 cup oats
- 2 Tablespoons cashew butter
- 2 Tablespoons maple syrup
- ½ teaspoon vanilla extract
- ½ teaspoon salt
- ½ cup shredded coconut, for rolling
This recipe is easy to make, easy to carry with you, easy to eat and absolutely delicious! Great for an on the go snack or whenever you need a little boost of energy. Best part – kids love them too!
Place all ingredients except for the half cup shredded coconut in the food processor and pulse/process until only small bits of cashews and dates remain. Remove mixture from the food processor and using your hands, compress the mixture together to form one tight ball. Portion the mixture into 12 even pieces; about 2 Tablespoons each. Roll each portion into balls and then roll each ball in the remaining shredded coconut. Store in an air tight container at room temperature.
Makes 12 (ping pong ball-sized)
