Chocolate Orange Refrigerator Truffles

  • 3/4 cup cream
  • 12 oz dark chocolate chips
  • 1 oz Orange liquor
  • 1/2 cup cocoa powder

Heat the cream to a simmer.  Pour the hot cream over the chocolate and let it sit for 3 minutes.  Whisk until smooth.  add the liquor and refrigerate until firm.

To form the truffles, use a Parisian scoop to form small balls with the ganache.  Roll the balls in the cocoa powder and place them in a tray.  Keep refrigerated until ready to serve.
