Cilantro Lime Black Beans
2 cups dried black beans, soaked in water overnight
1 (14.5oz) can diced tomatoes
1 medium yellow onion, diced
2 Tbsp lime juice
2-3 Tbsp canola oil
1 green bell pepper, diced
4 garlic cloves, minced
½ cup chopped fresh cilantro
1 tsp ground cumin
1 tsp ground coriander
1 tsp chilli powder
Salt and pepper to taste
- Place beans in a pot and cover with water 3-4 inches above the beans. Bring the beans to a simmer and cook for 45 minutes or until the beans are tender. Make sure there is always water in the pot, you may need to add more.
- Rinse and drain the beans, set aside
- Heat oil in a medium pot. Saute the onions and green pepper for 4-5 minutes over medium heat. Add garlic and spices and continue to cook for another minute or so until the mixture is fragrant.
- Add diced tomatoes, beans, lime juice and cilantro. Mix well. Cook for another 4-5 minutes until everything is heated through. Season to taste with salt and pepper. Serve hot.
