Cilantro Lime Hummus Dip
- ¾ cup garbanzo beans; soaked overnight
- ½ bunch of cilantro; washed, dried, and trimmed of stems; reserve some for garnish
- ½ cup sesame tahini
- 1 tbsp. fresh garlic; minced
- ¼ cup extra virgin olive oil
- 2 tbsp. soy sauce
- ¼ cup lime juice; reserve lime to cut in wedges
- 1 tsp. salt
- 1 tsp. freshly ground black pepper
In a medium sauce pan, cover soaked garbanzo beans with water and bring to a boil. Cook until tender, and drain. Puree beans in a blender until smooth, water can be added to reduce viscosity if necessary. Set aside in a mixing bowl. Rinse blender, and puree cilantro, tahini, and garlic with oil until smooth. Add mixture to beans and season with soy sauce, lime juice, salt, and pepper. Mix until thoroughly combined. Taste and adjust seasoning if necessary. Top with chopped cilantro and lime wedges.
