Creamy Garlic Hummus
- 1 ½ cups garbanzo beans
- ¾ cup tahini paste
- 4 cloves fresh garlic; minced
- ¼ cup tamari soy sauce
- ½ cup olive oil
- 2 lemons
- 1 tsp. freshly ground black pepper
- 2 tsp. salt
In a medium stock pot, place beans and enough water to cover by a few inches. Bring to a boil and cook until tender, drain, and set aside. In the bowl of a food processor, place all ingredients but lemon juice. Puree until smooth and turn out into a small bowl. Add lemon juice to taste, and adjust seasoning if needed.
