Cumin and Orange-Scented White Beans

1 onion, diced

1 stalk celery, finely diced

1 carrot, finely diced

3 cloves garlic, minced or pressed

½ tsp cumin

¼ tsp coriander

Rind of one orange

8 oz dried white beans

6 cups chicken or vegetable stock

1-2 Tbsp salt

black pepper

Remove the rind from the orange using a vegetable peeler. Leave the pieces large so you can fish them out at the end. Place all ingredients in the instant pot. Add 1 Tbsp of the salt and reserve the rest in case you need more seasoning at the end. Close the lid and make sure the pressure valve is closed. Set the Instant Pot for 30 minutes on normal pressure. Allow Instant Pot to release pressure on its own when the cook time is over. Open lid and taste for seasoning. You can strain the liquid from the beans or use it as a broth for soup. Remove Orange rind before eating.
