Curried Chicken Salad

  • 6-8 oz cooked chicken, shredded or diced
  • 2 Tbsp mayo
  • 2 tsp yellow curry powder
  • 1 tsp lemon juice
  • 3 Tbsp mango chutney
  • ¼ cup halved red grapes
  • 2 Tbsp chopped walnuts
  • Salt and pepper to taste

Combine all ingredients and mix well. Season to taste with salt and pepper.  Serve over bed of greens or as a sandwich on fresh bread.
