Curried Chicken Salad
- 6-8 oz cooked chicken, shredded or diced
- 2 Tbsp mayo
- 2 tsp yellow curry powder
- 1 tsp lemon juice
- 3 Tbsp mango chutney
- ¼ cup halved red grapes
- 2 Tbsp chopped walnuts
- Salt and pepper to taste
Combine all ingredients and mix well. Season to taste with salt and pepper. Serve over bed of greens or as a sandwich on fresh bread.
