Curried Quinoa with Apples
- 1 1/3 cups quinoa
- 1 garlic clove, minced
- Sea salt
- 2 Tbsp plain yogurt
- 2 tsp curry powder
- 1 1/2 Tbsp fresh lemon juice
- 5 Tbsp vegetable oil
- 2 Tbsp chopped cilantro
- 2 sweet-tart apples, medium dice
- 1 medium jalapeno, seeded and minced
- 3 scallions, trimmed and minced
- 3 Tbsp sliced or chopped almonds, toasted
Make this exceptional quinoa dish and your taste buds will thank you! It has a terrific combination of flavors and textures.
Add the quinoa to 2 2/3 cups of boiling, salted water. Stir and when water returns to a boil, lower heat to a simmer, cover pot and let cook until tender and popped, about 12 minutes. Let sit covered for a few minutes and then fluff with a fork. To make dressing, mash garlic with the salt using a mortar and pestle or the flat side of a large knife. Combine paste with yogurt and curry powder in a small bowl. Stir in the lemon juice and whisk in the oil. Let stand for 10-15 minutes to combine flavors. Adjust seasonings if needed. Toss the quinoa with the apples, jalapeno, scallions and dressing. Top with toasted almonds.
