Edamole Dip
- 1 lb. shelled edamame
- 1 medium red onion; finely diced
- 1/3 bunch cilantro; washed, dried, and finely chopped
- ½ cup lime juice
- 1 tbsp. salt
- 4 tsp. hot sauce
- 1 tsp. freshly ground black pepper
- 1 medium tomato; small dice
Steam edamame until over tender. Drain and dry well. Combine remaining ingredients except for tomato in a food processor. Puree until smooth consistency is achieved. Add chopped tomatoes, and taste. Adjust seasoning if needed.
