Edamole Dip

  • 1 lb. shelled edamame
  • 1 medium red onion; finely diced
  • 1/3 bunch cilantro; washed, dried, and finely chopped
  • ½ cup lime juice
  • 1 tbsp. salt
  • 4 tsp. hot sauce
  • 1 tsp. freshly ground black pepper
  • 1 medium tomato; small dice

Steam edamame until over tender. Drain and dry well. Combine remaining ingredients except for tomato in a food processor. Puree until smooth consistency is achieved. Add chopped tomatoes, and taste. Adjust seasoning if needed.
