Fiesta Sausage and Peppers

1 pound sweet Italian sausage, sliced

1 Tbsp olive oil

2 cloves garlic, minced

1 jalapeno pepper, seeds removed, small diced

1 cup green bell peppers, cut into ¼ inch strips

1 cup onions, cut into ¼ inch strips

½ cup tomato, small diced

¼ cup cilantro, chopped

½ tsp cumin

Salt and pepper to taste

  1. Brown the sausage in large skillet with olive oil over medium-high heat for 5 minutes.
  2. Add garlic, peppers, and onions.  Cook for an additional 8 minutes, or until the sausage is thoroughly cooked and vegetables are tender.
  3. Add tomatoes, cilantro, cumin, and season with salt and pepper.  Cook for one more minute.
  4. Remove from heat.  Serve hot.
