Gluten-Free Lemon Cake with Buttercream Frosting

  • 1 ½ cups sugar
  • ¼ lb butter
  • 4 eggs
  • 2 cups gluten-free baking mix
  • ½ tsp salt
  • 1 TB baking powder
  • ½ tsp xanthan gum
  • ¾ cup millk
  • 2 tsp vanilla
  • Zest of 1 lemon

Lemon Buttercream Frosting

  • 1 cup unsalted butter
  • 3 ½ cups confectioner’s sugar
  • Dash of salt
  • 1 tsp milk
  • 1 tsp lemon zest

 

Light and fluffy, perfect for a birthday cake!

Combine baking mix, salt, baking powder, and xanthan gum in a medium bowl. Using an electric mixer,  in a separate bowl, cream butter until fluffy, scraping bowl often. Add the eggs, vanilla and lemon zest, mixing well. Add the dry ingredients and the milk, mix until no dry ingredients remain. Scrape bowl and beaters, then mix on medium speed for one minute. Grease a 9″ pan and line with parchment paper, grease parchment. Bake in a 350F oven for 20-30 minutes until cake tests done.

In a mixing bowl, combine butter, sugar and salt. Beat until well blended. Add the milk and zest. Beat for an additional 3-5 minutes until smooth and shiny. Frost the cooled cake and decorate with candied lemon peel, if desired.
