Gluten Free Oatmeal Raisin Cookies
⅔ cup brown rice flour
¼ cup potato starch
1 Tbsp tapioca starch
½ tsp baking soda
¼ tsp xanthan gum
¼ tsp salt
¼ tsp cinnamon
1 pinch nutmeg
¼ tsp ground ginger
1 cup gluten free oats
1 ½ Tbsp butter
½ cup brown sugar
½ cup sugar
1 egg
1 ½ tsp vanilla
½ cup raisins
- Preheat oven to 350.
- Mix together oats, brown rice flour, potato starch, tapioca starch, baking powder, xanthan gum, salt, cinnamon, nutmeg, ginger, and oats together in a large bowl. Set aside
- Using a mixer, combine butter, sugar and brown sugar. Beat together using a paddle attachment on low until there are no lumps of butter remaining. Add the egg and vanilla. Beat until completely incorporated, scraping the sides of the bowl as necessary.
- Add the oats and flour mixture. Mix until everything is almost completely incorporated. Add the raisins and mix until everything is just combined.
- Portion dough using a rounded tablespoon into 12 even round balls. Place them on a parchment lined baking sheet 2 inches apart and press down on the dough until it is about 2 inches in diameter. Bake at 350 for 10-12 minutes, or until the edges are golden brown.
- Remove cookies from the baking sheet to cool on a wire rack.
