Gluten Free Oatmeal Raisin Cookies

⅔ cup brown rice flour

¼ cup potato starch

1 Tbsp tapioca starch

½ tsp baking soda

¼ tsp xanthan gum

¼ tsp salt

¼ tsp cinnamon

1 pinch nutmeg

¼ tsp ground ginger

1 cup gluten free oats

1 ½ Tbsp butter

½ cup brown sugar

½ cup sugar

1 egg

1 ½ tsp vanilla

½ cup raisins

  1. Preheat oven to 350.
  2. Mix together oats, brown rice flour, potato starch, tapioca starch, baking powder, xanthan gum, salt, cinnamon, nutmeg, ginger, and oats together in a large bowl.  Set aside
  3. Using a mixer, combine butter, sugar and brown sugar.  Beat together using a paddle attachment on low until there are no lumps of butter remaining.  Add the egg and vanilla. Beat until completely incorporated, scraping the sides of the bowl as necessary.  
  4. Add the oats and flour mixture.  Mix until everything is almost completely incorporated.  Add the raisins and mix until everything is just combined.  
  5. Portion dough using a rounded tablespoon into 12 even round balls.  Place them on a parchment lined baking sheet 2 inches apart and press down on the dough until it is about 2 inches in diameter.  Bake at 350 for 10-12 minutes, or until the edges are golden brown.
  6. Remove cookies from the baking sheet to cool on a wire rack.
