Grilled Chicken Legs with Cajun Spice Rub
For the Chicken:
- 8 chicken legs (about 2 lbs)
- 1 tbsp olive oil
- Salt and freshly ground black pepper, to taste
For the Cajun Spice Rub:
- 2 tbsp paprika
- 1 tbsp garlic powder
- 1 tbsp onion powder
- 1 tsp cayenne pepper (or more for spice)
- 1 tsp dried oregano
- 1 tsp dried thyme
- ½ tsp salt
- ½ tsp freshly ground black pepper
Instructions:
- In a small bowl, combine paprika, garlic powder, onion powder, cayenne, oregano, thyme, salt, and pepper.
- Rub the chicken legs with olive oil and season them generously with the Cajun spice rub.
- Preheat the grill to medium-high heat.
- Grill the chicken legs for 10–12 minutes per side, turning occasionally, until the internal temperature reaches 165°F.
- Let the chicken rest for a few minutes before serving.
