Grilled Chicken Legs with Cajun Spice Rub

For the Chicken: 

  • 8 chicken legs (about 2 lbs) 
  • 1 tbsp olive oil 
  • Salt and freshly ground black pepper, to taste 

For the Cajun Spice Rub: 

  • 2 tbsp paprika 
  • 1 tbsp garlic powder 
  • 1 tbsp onion powder 
  • 1 tsp cayenne pepper (or more for spice) 
  • 1 tsp dried oregano 
  • 1 tsp dried thyme 
  • ½ tsp salt 
  • ½ tsp freshly ground black pepper 

Instructions: 

  1. In a small bowl, combine paprika, garlic powder, onion powder, cayenne, oregano, thyme, salt, and pepper. 
  2. Rub the chicken legs with olive oil and season them generously with the Cajun spice rub. 
  3. Preheat the grill to medium-high heat. 
  4. Grill the chicken legs for 10–12 minutes per side, turning occasionally, until the internal temperature reaches 165°F. 
  5. Let the chicken rest for a few minutes before serving.
