Grilled Garlicky Pork Chops with Lemon & Rosemary

Serves 4
4 bone-in pork chops (about 1 inch thick) 

  • ¼ cup olive oil 
  • 3 tablespoons lemon juice (about 1 lemon) 
  • 3 garlic cloves, minced
  • 1 tablespoon chopped fresh rosemary  
  • 1 tablespoon fresh thyme leaves 
  • 1 teaspoon salt 
  • ½ teaspoon black pepper 
  • 4 Lemon wedges 
  • 1 tablespoon of chopped thyme and rosemary, for garnish 
  1. In a small bowl, whisk together olive oil, lemon juice, garlic, rosemary, thyme, salt, and pepper. Place the pork chops in a shallow dish and pour the marinade over them. Turn to coat well. Refrigerate and marinate for at least 30 minutes or up to 4 hours. 
  2. Heat your grill to medium-high. Oil the grates lightly to prevent sticking. 
  3. Remove the chops from the marinade. Grill for 4–5 minutes per side, or until the internal temperature reaches 145°F. Let them rest for 5 minutes before serving. 
  4. Serve with lemon wedges and the chopped herbs for garnish.
