Grilled Zucchini with Lemon and Parmesan

  • 2–3 zucchinis, sliced lengthwise 
  • Olive oil 
  • Zest and juice of 1 lemon 
  • ¼ cup grated Parmesan 
  • Salt and pepper to taste 

Instructions: 

  1. Toss zucchini with olive oil, salt, and pepper. Grill until tender and charred. 
  2. Transfer to a plate, drizzle with lemon juice, and sprinkle with zest and Parmesan.
