Grilled Zucchini with Lemon and Parmesan
- 2–3 zucchinis, sliced lengthwise
- Olive oil
- Zest and juice of 1 lemon
- ¼ cup grated Parmesan
- Salt and pepper to taste
Instructions:
- Toss zucchini with olive oil, salt, and pepper. Grill until tender and charred.
- Transfer to a plate, drizzle with lemon juice, and sprinkle with zest and Parmesan.
