Guacamole

  • 2 ripe avocados, mashed
  • 1/2 peeled tomatoes, finely diced
  • 2 Tbsp grated onion or finely chopped scallion
  • 2 Tbsp fresh cilantro, chopped
  • 2 Tbsp lemon juice
  • 1/2 tsp chili powder
  • 1/2 tsp coriander
  • 1 tsp olive oil

Mix all ingredients together and keep rerigerated until ready to serve.  To prevent browning, press a pieces of plastic wrap into the guacamole, pushing out all air pockets.
